Baking day

Well Maine has done its thing again with rain on top of the snow... boo!!! It's been windy, rainy and just gloomy today so I figured I would do some baking. I'm gluten/dairy free...sadly... so these are made with a rice flour mix that I mix up myself. I have to say that it's a great mix and and I can make cookies that taste really great. A friend told me recently that bacon fat in ginger cookies is a really good idea and since I had some in the fridge I decided to try it out. Pretty darn good. I can't really taste bacon in the cookies but I think the fat gives the cookies a really nice crispiness. Anyway, I'm bringing a few to school tomorrow.... ;-)
