Why? Not a lot of shallots

My lovely Vietnamese daughter really enjoys cooking.  I often go to the fridge and wonder why she uses such tiny bits of things.  Tonight was no exception.  I have placed the Euro (the only coin I could find - we never had money since COVID struck) to give an indication of the size.  She had taken the smallest section off two shallots to use in her food.  I could not for the life of me work out why so I asked!!!!!  Silly me - they are different colours!!!  Not sure if they taste different but I do know once cooked he pink ones turn white - I leave my taste question for another day because I am still amused at the first answer.
