Escarola

This is not lettuce, neither are endives. It is escarola - used to make soups or salads.
I have already told you about my winter soup. This is exactly what I used to make the soup. I hope my photo today explains it well.
In fact there are two types of escarola in my photo, to complicate things a bit. Doesn't matter, they're both good!!
