Frozen lemon grass and lime leaves

I'm making the most of cheap produce bought in bulk from Chinatown.

Lemongrass stalks, trimmed down and puree'd, frozen in ice cube trays with half a kaffir lime leaf on top.

When the blocks are frozen, flip them out and store them in a bag in the freezer. This allows you to reuse the tray and also grab as many ice cubes as you need.
