Bowl full of goodness!

Just finished making a bulgar wheat, edamame, apple, apricot and chickpea salad for lunches during the week. I'll put some of this on top of a baby spinach leaf and beetroot salad and pop a chicken breast that I grilled with harissa paste on top.

I've just had dinner and I'm looking forward to tomorrow's lunch already!
