Cheese cake

We had a large lump of cheese in the fridge demanding its intended destiny. A quick glance at one cookery book yielded a lot of recipes, but none contained cheese. I referred to the internet where either the recipe wasn't gluten free or required ingredients that were not available. The result was a rather off piste recipe which would be hard to duplicate. The base was shortbread using cornflour and the main bit contained a lot of almond flour, six eggs and a bit too much sugar. It worked however and this is the extra one for luck.
