Unbeknown by all is the all but useless fact that i was once a Michelin star chef, from the eighties, you understand. small portions, nouvelle cuisine they called it. Well, i was one of those.
Since then however, i have run my own food company curing and smoking our own woodland pigs, until my untimely exit in 2015.
One of my dry cures for streaky was Fennel & Coriander seed. I still make today for the household with a little help.
What i am able to do now though is grow the fennel and collect the green seed and store it over winter on the plant, and shake off in spring. This way i have at least some control over sourcing one of my ingredients.
