Pasta all'Ortolana
Not often I blip my food. But after over a decade it’s bound to happen occasionally. This is a dish I cook regularly to use up leftover veg.
Started off sweating down red onion, celery & carrot. Then added this lot with Italian herbs & dried chilli.
Finally mix in the cooked pasta, chuck in some Parmesan & a splash of pasta water.
Eat with suitably appreciative noises.
