Can aubergines ever look appetising ?

Tonight's dinner. Aubergine bake. Tinned tomatoes, sundried tomatoes, garlic, basil, thyme, aubergines, low fat mozzarella, topped with breadcrumbs and parmesan. Very tasty and very low weight watchers points! But the picture, I feel looks a little stodgy. Can aubergines ever look tasty?
