Burritos
I practiced many different ways of doing breakfast burritos this morning. I liked the version where I saute-ed the burrito after it was full so the tortilla was a little crispy.
You can make your mix and just fold it.
You can also lay your mix on the tortilla in the pan and then roll the whole thing up.
You can make your mix, fold it, and then saute the outsides.
I saw one where viele Rezepte put egg on both sides of the tortilla and then mix on top and then folded it. That looked like something to try tomorrow.
There is a place in LA called Low Key Burritos that wraps the burritos in a cheese blanket.
