Ready to roast!

Nice colourful dinner tonight. A bit of a mash up of a few different recipes so a sort of roasted veggie tomatoey stew with gnocchi. Was pretty tasty and has passed the “will I make it again” test!

A run, a couple of walks and a few things ticked off the list so not a bad Monday at all!
