From my Tuscan cookbook (Day45)

This was not from my Tuscan cookbook but from some distant memory of seeing zucchini cooked in at ragu sauce. These are those slightly harder courgettes than yer green standards and you won’t find them in Waitrose.

First I sauté them split lengthways in olive oil and garlic with some chopped up Neapolitan peppery sausage. Then I added home-made passata and cooked them slowly over a very low heat for an hour. They were quite delicious.
