Easter tradition

Simnel cake.
This is a fruit cake widely eaten in the UK and Ireland and associated with Easter Sunday.
It is distinguished by having 11 balls round the top. These are made of almond paste or marzipan.They symbolize the Twelve Apostles minus Judas Iscariot.
This particular cake is made from flour, eggs and brown sugar plus mixed spices, ground almonds, sultanas, glace cherries, dried apricots, marzipan, almonds, glucose syrup and apricot jam.
It was made by Blipper Jane Petley-Jones and sold today at the Arnside Country Market.
Mrs. K and I will enjoy it on Sunday.
