How did anyone ever work out that if you applied heat to it that the physical make up of it changes?

And that if you throw some butter and cream in it takes on a whole new body?

It’s amazing. I just can’t get my head round that someone thought to do that in the first place …. Even after they worked out that a plant would give them something so magical
