Chicken, tomato and mozzarella salad

When Mr C hot-footed it up to Scotland, he left a recipe and ingredients to make a chicken, tomato and mozzarella salad.  Much appreciated after a very busy working week.  It was very quick and very tasty.  So good in fact, I ate this three times whilst he was away.  It's a Tom Kerridge special, and from a favoured recipe book.   The recipe is in as an extra!
