Spanish Simple

I have always liked Spanish cuisine for its simplicity. French is, for sure, my favourite but Spanish is great for many reasons…simplicity, provenance and purity of flavour. Today’s main course (sole/lenguado with red peppers) at a newly discovered ‘casa de comidas’ around the block, is a case in point. The starter of spoots/navajas/razor-shell fish - in extras - being another — wonderful!
