Platinum Pudding

This is the completed lemon Swiss roll and amaretti trifle using the recipe that win the Platinum Pudding competition. I ran out of space in the bowl to put the whipped cream on top so that had to be added separately. I loved the fresh lemon and orange flavours and the amaretti biscuit layer but if I made it again I would not bother making the Swiss roll. Instead I would use thin slices of Madeira cake sandwiched together with the homemade lemon curd. You live and you learn!
This was just one of the many delicious things nine of us feasted on at our friends’ gathering and there was much chat and laughter. The two children loved Bertie and he was happy to be taken for lots of walks around the garden in the sunshine.
