Jambalaya
Made by my own fair hand!
This is the festival dish from New Orleans, the home of Mardi Gras ( I just read). But its origins are Spanish, French, African and Caribbean.
Ok, it's a bit like Paella or a very complicated Risotto and I managed with my timer to make a reasonable job of it.
Am I happy? yes I am!
I should have taken more time over the photograph !!
