Lunch!!
Basa is one of the lesser known fish and when it's smoked has a rather meaty texture and quite a sweet taste to it. The plan was to make a chicken casserole but I forgot to take out the chicken thighs from the freezer, so since this makes a gorgeous fish stew/casserole, it will be a most acceptable substitute:) The fish itself cooks/poaches, in no more than 15 mins, so the prep of the veggies actually takes longer.
I cook it on the hob, rather than in the oven. It's served over rice for us but makes a hearty meal if you add potatoes to the veggies and a can of chopped tomato, chopped leeks and onion, carrots, even courgette, you can vary it to suit your appetite:))
