Fancy an anchovy?
Today I bought some anchovies at the fish market. I have cured them in lemon juice. This is not the usual recipe - anchovies are usually cured in vinegar and salt, but I finally found another use for our lemons!
Once the anchovies are cured, I always wash them to remove the lemon or vinegar. Then I add some olive oil and put the containers with anchovies in the freezer.
Since anchovies are not cooked, they need to be frozen to avoid anisakis.
They are delicious as snacks with some crisps
