Grilled Cheese

Manchego and fontina grilled cheese sandwich with caramelized onions and cherry-fennel-sherry preserves, roasted tomatoes with herbes de Provence, and bok choy with ranch dressing. Wine: Baron Fuenté Esprit Grand Cru Champagne.

I feel a bit like polishing my fingernails on my non-existent lapel for this grilled cheese. I got the unusual preserves as a surprise bonus item with some spices a few months ago, and I immediately had the idea of using them on a grilled cheese sandwich with Manchego. The rest of the details came together today as I finally decided it was time to make it. It was delicious.
