Divine
The Head Chef (aka Head Gardener) made this fabulous cake which contains Sicilian lemon extract, finely grated lemon rind, ground almonds, sandwiched together with lemon curd and ‘icing’ made from whipping cream, marscapone (light!) and icing sugar beaten together topped with the icing, drizzled lemon curd and toasted almonds. Half of the cake we left without the almonds because Miss S (daughter) doesn’t like them.
A friend made one for our blowing club Open Day Triples competition and I liked it so much she sent me the recipe.
It is fabulous.
