Amaranth

A recent article in The Guardian described Amaranth as;
“A complete protein with all nine essential amino acids, amaranth is a highly nutritious source of manganese, magnesium, phosphorus, iron and antioxidants that may improve brain function and reduce inflammation. This is a plant that could feed the world.”
Apparently it is booming in popularity as a health food.

I ordered seeds back in the spring and have grown a few plants, which I just transferred to the garden this afternoon.
