Steak
Sous vide strip steak with eggplant escabeche, honey-chili glazed carrots, and smoked carnaroli risotto. Wine: Château Bernadotte Médoc 1989.
An excellent Friday night dinner. The risotto was particularly outstanding. I was not sure what I would think of smoked carnaroli when I came across it, but I'm very glad I decided to try it.
