Let's Try Something New

Today M. and C. came for a visit and P. is there, so there was an opportunity to try a new recipe. I stumbled over a vegan rainbow lasagne and couldn't resist.
So I chopped up a lot of vegetables and cooked them in the oven.
Than I made colourful sauces from different vegetables:
purple: red onions and blueberries (couldn't find blue carrots)
red: onions and beetroot (turned out brown :-/ )
orange: onions and carrots
yellow: potatoes and parsnips
green: broccoli and spinach
The result was delicious and a taste surprise, but less colourful than the recipe, as you can see in the extra. My guests liked it nevertheless ;-)
