Coconut Pancakes

My friends always seem to find a new traditional Thai dessert for me to try. This one is like a pancake with coconut flakes in it. It's not too sweet but very tasty. The man making it used what looked like a plaster tool (yeah, I know it has a real name but it has escaped my memory) to flip the pancakes at exceptional speeds.
