Latest pumpkin recipe

The weather's started to be very dreich, very November-like so this hearty vegan recipe made a nice dinner last night. 

Uchiki Kuri squash, stuffed with smoked tofu and mushrooms. Delicious.

We've still hardly made a dent in the pumpkin glut, it's just as well most of them should see us through the winter!
