Molasses gingersnaps.

My sister-in-law made some cookies. Baking in an unfamiliar oven can be challenging, and foreign ingredients sometimes taste and behave differently. With some trial and error, she finally got a batch that she felt came out right. The first batch was cakey and didn't spread enough but was still good. Some in the second batch were a bit burnt (these were actually my favorite, so I happily helped dispose of the evidence). The final batch was deemed just right.
