Start the week with a duck egg
I had a craving for Çılbır (or at least my version of it).
There is a massive shortage of eggs at the moment so duck eggs were my only option. Their big yellow yolk are perfect for this.
For the garlic yogurt: warm a grated garlic clove in a tablespoon of olive oil. Add to the Greek strained yoghurt together with good pinch of salt.
Slice and assemble spring onions, tomato, cucumber and finely sliced lemon. Add the poached duck egg and a drizzle of smoked chipotle oil (Aleppo pepper is more traditional).
