Taking a break from unpacking
Another day of unpacking with my dear friends and fellow blippers Burradoo and MountGrace (extra). We stopped for a drink and two of us shared a lamington which is an Australian invented cake with a range of different stories of its origin. The one common element is that the cake is named after Lord Lamington, the eighth governor of Queensland, 1896-1901 and that the discovery was an accident.
A lamington (shown in extra) is a small sponge cake covered in chocolate and dipped in coconut. I prefer the ones that have jam and cream in the middle which we had today.
One story is, that Lord Lamington’s maid accidentally dropped the sponge into some melted chocolate. To avoid a messy cake she rolled it in coconut.
