Vegetarians look away now

Since we live in a place where Swaledale sheep abound, we were pleased to have the chance to buy some Swaledale mutton. This is Elizabeth David’s slow cooked Épaule de mouton boulangère. Looks nice, smells good - I haven’t tried mutton since school dinners a zillion years ago when it came in grey, tasteless slices, so I’m really hoping this works out ok.
