Mid-Week Pork Roast

Yesterday my meat and veg box arrived with a piece of pork loin, some flat beans, carrots and leaks, so tonight I made a pork roast. As I was chopping the carrots the light fell across the chopping board and very pretty it looked too. It's been several weeks since I cooked like this, taking my time, making everything right. And to round things off the weather stayed nice and Vin and I were able to eat dinner al fresco.
