Chicken curry

As tradition goes….we have a roast on a Sunday and curry on Monday, which is a modern version of roast on Sunday - fry up on Monday.

I remember we had little money when I was a child. The “Sunday joint” would be served to the man of the house (my dad) before anyone else, and any remaining meat would be served up on Monday with mashed up veg warmed up in the frying pan…with ketchup.

I doubt my mother has ever eaten curry! My mother in law, who was 15 years her senior, regularly ate curry. The last time I remember my mother in law eating curry is very memorable; I was taking care of her that weekend.

Anyway - Monday curry is a regular in this house. No ketchup required.
