Gouda cheese

Last night we watched a Rick Stein programme from Cornwall where he visited a local Gouda cheese making busines. Today we felt it was time to try some gouda cheese again. No Cornish variety was available, only this Dutch version. We shall be trying it tonight in our quesadillas.
