A Spot of Baking

We have friends coming for coffee tomorrow so I thought I would bake a cake.  This is one of M's favourites; Delia's Preserved Ginger Cake.  The icing is made with lemon juice which adds a citrus hit to the warmth of the ginger.  Even better, it's easy to make, cuts into 15 pieces and freezes really well too.

What's not to like!
