Cod with Carrot Sauce

Cod on a bed of leeks and dill with carrot sauce, and potatoes. Wine: Andrew Murray Enchanté 2021.

This was an amazing dinner. The recipe came from Claus Meyer's The Nordic Kitchen (which makes me wish dinner at Noma was in my future, but alas...). The wine is a Rhone style white blend from the Santa Ynez Valley in Santa Barbara Country.
