Raw-sausage siskonmakkara soup
Today we went to the local library cafeteria for a lunch. This is a community cafe held by a settlement organization Reintola. Lunch offered for 7,50euros.
May I present, meet "siskonmakkarakeitto"! This is actually potatoe - sausage -soup with vegetables, but these ball -looking sausages were raw when added into the boiling almost ready soup. Very tasty dish. Kind of slow to do, as the sausage has to be squeezed out from the intestine or tube one ball after another...
The recipe goes like this, if you like to try!
500 g raw sausages
1.5 l of water
6 potatoes
3 carrots
piece of celeriac (approx. 100g)
piece of parsnip (approx. 100g)
piece of fennel (approx. 100g)
1 Onion
a piece of leek
3 bay leaves
8 whole black peppercorns
6 whole allspice
1 teaspoon of sugar
1 vegetable stock cube
1 bouillon cube
plenty of chopped parsley
1 tsp (salt)
Wash, peel and dice the potatoes ans carrots and chop the onion and the washed leek. Heat the water to boiling, add stock cubes, spices and potatoes, carrots and onions. Let it boil slowly 15-20 min.
Then squeeze the sausages into the soup with your fingers. Let it boil for approx. 5-10 min. Check the taste and add salt if necessary. Chop plenty of parsley into the finished soup, if you like it.
Soup tastes good with crackers, for example.
Sunny morning and evening too as I left to yoga-pilates. Freezing cold nights, but few decrees warm in the afternoon. Colder that usually this time of the year...
