Strawberry shortcake cupcakes

These were one of the most intricate cupcakes I have ever made! They featured in the Mother’s Day gift boxes so Mum got two of these absolute delights!

They consist of a shortbread base, strawberry cupcake, strawberry creme filling topped with strawberry Swiss meringue buttercream and a white chocolate topping, with pie crumb!

Lots of elements to make the strawberry jam that featured in all elements was homemade too!

For most it was Mother’s Day today, happy Mother’s Day to you all, especially to my mum!

As I have worked today, I’ve had pizza with the boys when we all got home and I will celebrate on Wednesday and with my mum next Sunday!
