Simnel Cake

I had a busy cooking day. Having soaked my mixed fruit overnight I completed the mixture and baked it this morning. You can see the delicious cake in my blip. It doesn’t have the look of a simnel cake, mostly due to me limiting the amount of marzipan I use. I only put it in the middle of the cake!  
In the afternoon I prepared for a roast dinner. Just for two, but it’s the same amount of work cooking for more. And it was yummy!
