Cheesecake Chewsday

My student requested cheesecakes for this week’s cookery lesson. I don’t think I’ve ever made cheesecake before but I knew it would take too long for a large one to chill so we adjusted the recipe and made small ones in cup cake cases. We chilled them for 90 mins which wasn’t quite long enough but they were bloomin’ delicious. We shared them with the other tutors and students and everyone was very complimentary.
