Ancient Greeks in Sicily
We bid ‘arriverderci’ to family and rural mountains of the Madonie and headed to the coast of Sicily. We stopped to visit Segesta where the Greeks left there mark - a temple still stands majestically as does the amphitheater looking out towards the Tyrhennian Sea. A traditional salad of Trapani, Pantanesca, is my new favorite: cherry tomatoes, potatoes, green olives, capers, and anchovies in an olive oil/vinegar marinade. When I asked why the dish was listed under the vegetarian section of the menu, the waiter replied that the ‘anchovies were very small, very small’.
