Had a leisurely lie in knowing that I am organised for tonight's dinner guests.
We've been friends with Aileen and Jim, Ian and Cathy for almost 30 years. David worked with Aileen and Ian in the distant past, when they all worked for RBS, before D got out when it turned from being a proper financial institution into a retailer. Over the many years since, we've take turns at being host for dinner, and this is the first chance we've had to get together again post covid.
Thanks to my busy afternoon of food prep yesterday, all that remained for me to do in preparation for tonight's dinner was to pop the Jersey Royals on to boil and put the salad together. D, my right hand man, set the table.
Amazingly for us, we were ready and waiting when everyone arrived (we are usually running late and only ready seconds before friends come to the door!) Lola definitely approved of the guests and was very happy to see everyone! D had a bag of high value treats on hand to call her to heel when her attention threatened to be too much, but they are all dog lovers and were encouraging her to go to them for cuddles and belly rubs. She was in heaven :-)
Thankfully, after all my prep, dinner was easy and a great success. I will definitely be making this menu again. The chicken pesto roll-ups were a huge success (I used sun dried tomatoes instead of fresh tomatoes for a flavour punch)
We had such a lovely evening finally catching up and hearing everyone's news. We could never have predicted when we last got together, what was about to befall the world! I love that we took up where we left off four years ago.
The evening flew by and in a blink it was 2am and it time to say goodnight. World events allowing, hoping to get together again soon!
