Chorizo

I have known of Chorizo for many years, but until last year I always saw it as a sandwich filling with Jarlsberg cheese, thinly sliced from a large diameter sausage and plastic wrapped by the supermarket. When chemotherapy started last year it did strange things to my taste buds and I also discovered the fabulous smaller Chorizo sausages in Sainsbury's. Chicken and Chorizo paella has become a regular in our house. It was revolutionised when I discovered that traditional paella is always burnt to the pan and the head of the houshold gets the burnt bit. We are far more democratic and burn more so we can all have a burnt bit. Burning brings out the flavour and adds a whole new taste.
