Banh Xeo (Crispy Pancakes)

Dinner at our son's house tonight. It was Banh Xeo, and was a special treat. It is Vietnamese, and you can read more about it here. This was apparently the Southern version, as it was made with coconut milk. It was very tasty. We wrapped it in a lettuce leaf (Romaine) and dipped it in the special sauce. I love exploring other cultures and cuisines, so this was "right up my alley!" Not a very good photo, but it was my only chance. It was a lot of fun, and was very tasty.
