"Vegan" day 8

..I made this with egg whites and tumeric, yes even if you want to be a vegan, you can modify and next I will eat an egg too for the vitamin B12, just did not have any at hand, but will get some today from my step son's chickens. This was delicious with tomatoes and parsley and cilantro.
My new book from the NY Times cookbook writer 'Vegan at TIMES' means she is from the Times but also we don't have to be vegan all the time.
I am doing this for health reasons and not as a new diet craze.
I love it so far, it makes me feel good and happy. Sounds crazy? I am also loosing weight, a great side effect. I could go on and on......
