Magic cardamon chocolate clusters

I love the fresh citrusy flavour of cardamon. When I stumbled across a recipe by raw chocolatier, Amy Levine, I had to give it a go.

The clusters are made from almonds and buckwheat, with some of the spice, and sweetened with maple syrup and coconut sugar. I think I'd add dates if I were to do this again to give the mixture some stickiness as rolling them up was a lesson in patience.

Anyway, once they were dehydrated they were fine. I half enrobed them in thick chocolate with the same spice added.

Was very tempted to wolf them down myself today, but I am saving them to share with fellow outdoor swimmers this weekend. Off the Lakes were are, for our annual total immersion. Pray for good weather.
