Chicken Soup

As I am by myself, I have to confess that often I really can't be bothered to cook. There is only me. However, yesterday I was in Waitrose and there was a sell by date chicken with a major reduction so I bought it (obviously) and had a roast chicken dinner. Then, I cut off all the meat (that will give me at least 4 more meals) and made stock from the carcass. Today I made a batch of chicken soup base with the stock. I had a chicken salad for lunch and chicken soup for dinner. 

This sort of activity (cooking from first principles) is unusual so I regret you may have to brace yourselves for some more "chicken focused" food blips!
