Almost No-Knead-Bread

3 cups flour
1/4 tsp yeast
1 1/2 tsp salt

1/4 C. Lager (beer)
1 Tablespoon Vinegar (White or your preference)
3/4 C. Water

Add wet to dry, folding gently into a shaggy ball. Add a few tablespoons beer or water until your ball sticks together. Cover with plastic wrap and forget about it for 8 to 18 hours.

When you remember it again, turn it out onto floured surface, knead for 10 to 15 times and set on top of parchment paper. Lift the whole thing and set in skillet to rise two hours.

preheat oven to 400F to 500F. (Recipe calls for 500, but I didn't go that high and my bread turned out great anyway). Place dutch oven in oven for 30 minutes (including cover). Lift dough by parchment paper and set inside of heated dutch oven. Place cover over it and bake for 30 minutes. Check to see how brown it is. If you need more time, take cover off to brown.

It's just delectable!
