Corn Bread French Toast

Weekend brunches are a weakness that both my partner and I share. Pre-baby, I was often loitering in the kitchen on weekend mornings, coffee in one hand while conjuring up something to eat with the other.

Since it's hard to spend much time in the kitchen with our little bub now around, we usually go out to eat brunch on the weekends instead. But there's only so many full Scottish brekkies I can take!

So today my partner kindly entertained the little one while I baked a loaf of corn bread and then used it to make french toast, served with bacon, avocado, rocket and smoked paprika maple syrup. All I can say is yum! I really do need to get back in the kitchen on the weekends more often!
