Maturing
Cheeses. This is cheddar, made at a farm not far from Wookey Hole. It is brought down into the caves at about the one year point and remains there for up to a year, wrapped in cloth which goes quite mouldy – the smell of mould is quite strong. Then it is ready for sale. Each wheel weighs around 27kg, apparently and they are carried on a trolley twelve at a time along the tunnels to and from this storage tunnel.
We have son and his sons with us and our visit to Wookey Hole was well worth the journey, and not only because the weather was so poor. The tour was very interesting and reminded me that I don't fancy the idea of caving. The Extra shows one of the caves with a boat on the river – used as part of the exploration of the caves, which is still under way.
